9.30am Cycle to the office to meet Laurent, our chocolatier, and taste our bespoke chocolates. If I'm organised I bring oatcakes and nut butter from home; I don't like tasting on an empty stomach. Try four or five chocolates at a time, and drink white tea to cleanse my palate.
3pm Retreat with a mulberry-leaf tea to work on a new wrapper design. Afterwards I taste some cakes at the Motcomb Street branch, with a cappuccino.
7pm Barbecue some fish to have with spinach, purple sprouting broccoli and rice, and a glass of white. I tend to eat chocolates and desserts only when tasting ? they're not part of my normal routine.
