My Day on a Plate: Tom Herbert

9.15am Arrive at the school, make bread rolls with the kids, then head to the bakery to finish them off.

3pm Meetings at the bakery caf� about a barbecue festival we're involved in, then I trial some new bread recipes. Succumb to the temptation of a date and walnut cake, and another coffee.

6pm Make an easy fish curry, with a stack of wholemeal chapatis instead of rice. Finish the day with a rooibos tea and a sneaky bit of chocolate.

It's no bad thing that Tom's staple food is bread; the starchy-carbs group should be the main energy provider in a healthy diet. It would be good to see a little more fruit and veg, and he should think about his coffee intake. While filter and americano-style are fine, this quantity of espresso will raise his blood pressure and leave him dehydrated.
